Blueberry Macarons

Large Radish

This simple and elegant Blueberry Macaron Recipe is sure to be a hit with anyone that has a sweet tooth.  These melt-in-your-mouth French macaron cookies are paired with a sweet vanilla American buttercream filling with a blueberry jam surprise hidden inside.

INGREDIENTS Macaron Shells 100g egg whites ¼ tsp cream of tartar 1 tsp vanilla extract gel food color 100g sugar 140g almond flour 125g powdered sugar Filling American buttercream Blueberry vanilla jam

STEP 1

Sift the almond flour and powdered sugar together into a bowl. 

STEP 2

Whip the room temperature egg whites in a stand mixer on low speed until foamy, then add the cream of tartar.

STEP 3

Whip on medium speed until soft peaks form and then slowly add the sugar and food coloring to the egg whites. 

STEP 4

Continue whipping the mix on medium speed until stiff peaks have formed. This will take approximately 15 mins.

STEP 5

Add half of the dry ingredients and fold into the meringue. Repeat until all dry ingredients are incorporated.

STEP 6

Transfer the batter to a pastry bag with a large round tip and pipe the mixture onto the prepared baking trays.

STEP 7

Bake at 300 degrees Fahrenheit for 15 to 18 minutes. Remove the shells from the oven and allow to cool.

STEP 8

Fill the macarons by piping a dam of buttercream and then adding a tsp of jam to the center.
