Ingredients
  

  • 1 pound fresh strawberries
  • ½ cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon zest

Instructions
 

  • Start by washing, hulling, and halving the strawberries. If your strawberries are very large, you can quarter them instead.
  • Add the strawberries, sugar, and lemon juice to a saucepan and mix them together.
  • Place the saucepan on the stove on a medium heat and bring the mixture to a simmer.
  • Cook the compote for 20-30 minutes, stirring occasionally until the berries are soft and the sugar has dissolved.
  • Remove the compote from the heat and let it cool slightly.
  • Stir in the lemon zest and vanilla extract (if using).
  • Allow to cool completely and use immediately or refrigerate for up to two weeks.
