Ingredients
  

  • 1 pound shell pasta
  • ¼ cup olive oil
  • 2 cloves garlic minced
  • 1 shallot finely diced
  • 2 tablespoon vodka
  • ½ cup tomato paste
  • 1 cup heavy cream
  • 2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon butter
  • ½ cup parmesan cheese
  • ¼ cup fresh basil finely sliced

Instructions
 

  • Cook the pasta according to package instructions. Once the pasta is done, drain it and reserve ½ cup of the pasta water.
  • In a large pot or skillet, heat the olive oil over medium-high heat. Add the garlic and shallot and sauté until fragrant, about 1-2 minutes.
  • Add the tomato paste and vodka (if using) and stir to combine. Cook for a few minutes until the tomato paste starts to darken in color.
  • Add the heavy cream and red pepper flakes and stir to combine. Simmer until the sauce starts to thicken, about 3-4 minutes.
  • Add the salt and pepper, butter, and reserved pasta water and stir to combine. Bring the sauce to a simmer and let it cook for another minute or two until the sauce is nice and thick.
  • Add the cooked pasta to the sauce and stir to combine. Cook for a minute or two until the pasta is heated through.
  • Add the parmesan cheese and stir to combine. Taste and adjust seasonings if needed.
  • Serve hot, topped with a sprinkling of grated parmesan cheese and finely sliced fresh basil.
