Instructions
Start by crushing the Oreo cookies into small pieces using a food processor or by placing them in a plastic bag and crushing them with a rolling pin. Set aside.
In a large bowl, mix the instant pudding mix with cold milk according to package instructions. Allow the mixture to thicken for 3-5 minutes before moving on to the next step.
Add the Cool Whip and gently fold it into the instant pudding.
Mix shredded coconut with a few drops of gel food coloring in a small bowl or ziploc bag until the coconut is evenly coated. Set aside.
Divide the pudding in half and put into two separate bowls. Then add 2-3 drops of one color food coloring into one bowl, and another 2-3 drops of a different color food coloring in the other bowl. Fold to combine. You can add more food coloring as needed until the desired color is reached.
Assemble the cups - layer the crushed cookies in the bottom of clear plastic cups or jars, then add a layer of the pudding mixture on top. Repeat layers until the cups are almost full.
Add the toppings - sprinkle the dyed coconut on top of the pudding to create a grass-like texture, then add a few Cadbury mini eggs on top. Finish each cup by placing a marshmallow Peep bunny on top of the grass.
Chill and serve - refrigerate the cups for at least 30 minutes before serving to allow the pudding to fully set. Serve and enjoy!
