Mini Egg Brownies made with Cadbury mini eggs are a delectable treat that combines the rich, chocolatey flavor of brownies with the irresistible crunch of mini eggs. Ingredients
 
 

  • ½ cup unsalted butter melted and cooled
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups all purpose flour
  • ¼ teaspoon baking powder
  • ¾ cup Cadbury mini eggs roughly chopped

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Lightly grease an 8x8 inch baking dish with cooking spray or butter and set aside.
  • In a large mixing bowl, whisk together the melted butter and cocoa powder until smooth.
  • Add the sugar, eggs, vanilla extract, and salt to the bowl, and whisk until well combined.
  • Add the flour and baking powder to the bowl, and whisk until the batter is smooth and well combined.
  • Fold in half of the roughly chopped Cadbury mini eggs.
  • Pour the batter into the prepared baking dish, and smooth it out with a spatula.
  • Sprinkle the remaining mini eggs on top.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of the brownies comes out with just a few moist crumbs attached.
  • Let the brownies cool completely in the baking dish before slicing and serving.
