In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until it's fully cooked through and no longer pink.

If using chili powder, add it to the skillet with the ground beef and stir to combine.

Season the beef with salt and pepper.

Cut the Velveeta cheese into small cubes and add it to the skillet with the ground beef and the Rotel tomatoes. Stir until the cheese is melted and fully combined with the beef and tomatoes.
