Mini egg rice krispie Easter nests are a delicious and visually appealing dessert that are perfect for celebrating the Easter season. These cute little nests are made by combining Rice Krispies cereal with melted marshmallows and butter, which is then molded into the shape of a nest using a muffin tin. The nests are then filled with Nutella and coconut and then topped with mini chocolate eggs for a burst of color and flavor that's sure to please your taste buds.
Lightly grease two 12-cup muffin tins and set them aside.
Melt the butter in a large saucepan over low heat.
Add a pinch of salt and the bag of mini marshmallows. Stir constantly until the marshmallows are completely melted and combined with the butter.
Remove the saucepan from the heat and stir in the vanilla extract.
Add the Rice Krispies cereal to the saucepan. Mix well until all the cereal is coated with the marshmallow mixture.
Scoop 3-4 tablespoons of the Rice Krispies mixture into each of the wells in the muffin tin. Use your hands to press them down and mold them into the shape of the tin. Leave a small dip in the center to fill with Nutella. Allow it to set at room temperature for 30 minutes.
While the nests cool, prepare the colored shredded coconut. Separate the shredded coconut into two zip top bags and add 1-3 drops of purple food coloring to one bag and 1-3 drops of blue food coloring to the other bag.
Close the bag and massage the contents together until the color has rubbed onto the shredded coconut. Set aside.
Spoon a dollop of Nutella into the center of each nest. Use the back of a spoon to smooth the Nutella into the nest.
Sprinkle the colored coconut over the top of the Nutella and top each nest with 2-3 Cadbury mini eggs, pressing them gently into the Nutella filling.
Allow the nests to cool completely. One cool, use a butter knife or a skewer to remove the nests from the muffin pan and serve. Enjoy!
