Ingredients
 
 

  • 1 pound rigatoni pasta
  • 2 tablespoon olive oil
  • 1 medium shallot finely diced
  • 2 cloves garlic crushed
  • 2 cups tomato sauce or passata
  • 1 package Boursin cheese
  • 1 teaspoon dried basil
  • 1 teaspoon red chili flakes
  • ½ teaspoon black pepper freshly ground

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1 cup of pasta water then drain the pasta and set aside.

  • Heat the olive oil in the same pot over medium-high heat. Add the garlic and shallot and sauté until they are fragrant (about 1-2 minutes).

  • Add the tomato puree, dried basil, red chili flakes, and black pepper to the pot. Stir to combine then bring the mixture to a simmer and reduce the heat to medium-low. Simmer for 5 minutes, stirring occasionally.

  • Crumble the Boursin cheese into the sauce and stir until it’s melted and well combined.

  • Add the cooked pasta to the pot and stir to combine. If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
  • Taste and adjust the seasoning as needed.
  • Serve warm, topped with freshly grated Parmesan cheese and chopped or torn fresh basil leaves (optional).
