Ingredients
 
 

  • 1 pound rigatoni pasta
  • 1 pound hot Italian sausage
  • 1 medium shallot finely diced
  • 3 cloves garlic minced
  • 28 ounces canned tomatoes crushed or diced
  • 1 cup heavy cream
  • 2 teaspoon dried basil
  • 2 tablespoon salted butter
  • ½ cup parmesan cheese grated
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes

Instructions
 

  • Cook the pasta according to the package instructions in a large pot or Dutch oven. Once cooked, reserve 1 cup of pasta water then drain the pasta and set aside.
  • Add the shallot and garlic to the pot and sauté until fragrant and softened, about 2-3 minutes.
  • Add the sausage and cook over medium heat until browned and cooked through. Use a wooden spoon to break up the sausage into smaller pieces. Drain off the rendered fat if needed.
  • Pour in the canned tomatoes, dried basil, heavy cream, salt, and pepper, then bring the sauce to a simmer. Cook for 3-4 minutes.
  • Add the salt, pepper, and butter and simmer for a further 2-3 minutes.
  • Add the cooked pasta back in with a splash of the reserved pasta water to loosen the sauce, if needed.
  • Add the grated parmesan and stir through.
  • Serve hot, topped with additional parmesan cheese and chopped fresh parsley or basil, if desired.
