Sausage Rotel dip is a delicious and hearty dip that is perfect for parties, game nights, or just as a snack. This dip is made with a combination of ground beef, Velveeta cheese, and Rotel tomatoes, giving it a savory and slightly spicy flavor that is sure to please.

Ingredients
 
 

  • 1 pound lean ground beef
  • ½ teaspoon chili powder
  • salt and pepper to taste
  • 16 ounces Velveeta cheese cubed
  • 10 ounces Rotel tomatoes with juice

Instructions
 

  • In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until it's fully cooked through and no longer pink.
  • If using chili powder, add it to the skillet with the ground beef and stir to combine.
  • Season the beef with salt and pepper.
  • Cut the Velveeta cheese into small cubes and add it to the skillet with the ground beef and the Rotel tomatoes (juice included). Stir until the cheese is melted and fully combined with the beef and tomatoes.
  • Reduce the heat to low and let the dip simmer for a 5-10 minutes, stirring occasionally, until it's hot and bubbly. Adjust the seasoning, if needed.
  • Serve the dip warm with tortilla chips or your preferred dippers.
