Banana Nut Kodiak Cakes Muffin Recipe

This Kodiak Cakes muffin recipe is an excellent way to start the day or as a snack anytime. Using Kodiak Cakes Buttermilk Power Cakes Flapjack and Waffle Mix as a base, these delicious treats are full of juicy bananas and crunchy pecans, making them an irresistible combination. Each muffin contains 5 grams of protein, so you can stay fueled up and satisfied throughout your day.

Ingredients
  

  • 3-4 medium bananas very ripe
  • ¼ cup unsalted butter melted
  • ½ cup brown sugar
  • 1 large egg
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups Kodiak Cakes Buttermilk Power Cakes Flapjack and Waffle Mix
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ cup pecans finely chopped

Instructions
 

  • Preheat the oven to 350°F and line two 12-cup muffin tins with paper muffin liners or cupcake liners.
  • On a large plate or in a large bowl, mash the bananas until they are mostly smooth. Set aside.
  • In a separate large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg, milk, and vanilla extract until combined, then mix in the mashed bananas.
  • In a separate bowl, combine the Kodiak mix, salt, cinnamon, baking powder, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Then fold in the chopped pecans.
  • Evenly divide the batter among the muffin cups in each muffin tin, filling each cup until mostly full.
  • Mix a few tablespoons of chopped pecans and brown sugar together and sprinkle on top of the muffins for some extra crunch.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool for a few minutes in the pan then transfer to a wire rack until completely cooled. Enjoy!
